Barbie Party! Strawberry Pineapple Cupcakes -Two Ingredient

I love the pretty pink color of these Strawberry and Pineapple cupcakes, and sprinkles just make everything fun:@) Whether it's a Barbie Birthday Party or weekend sleepover, why not whip up a batch of these easy two-ingredient cupcakes for the kids. Or better yet, get them involved, I'm a big fan of encouraging kids to learn to cook! I found both strawberry cake mix and hot pink frosting at Dollar Tree, and of course they are at all the supermarkets and Walmart too. For this batch, I made a cream cheese frosting, used a disposable icing bag and large M1 tip for decoration.

A note about store bought cake mixes: 

As with everything else, they are getting smaller.

So, since the original recipe used an approx 18 oz box, and mine was 15 oz, 

I removed about 2 Tblsp of pineapple before mixing.

Just something that seemed to make sense...

I have absolutely no doubt these cupcakes would be Barbie approved😎
